Lasagna

INGREDIENTS

  • 500g mince
  • 1 medium onion, diced.
  • 2 cloves of garlic, crushed
  • 2 rashers of bacon, sliced into smaller pieces
  • 4 button mushrooms, sliced
  • 1 medium packet of baby spinach
  • Can of diced tomato
  • 4 tsps Tomato Paste
  • 1 tsp Basil
  • 1 tsp Oregano
  • 2 packets of instant pasta sheets (or proper pasta if you’re fancy)
  • 5 tbs butter or margarine
  • 4 tbs Plain Flour
  • 4 cups of milk
  • 1/2 tsp nutmeg

METHOD

STEP ONE

In a large oiled pan on medium heat, brown the onion, garlic and bacon. Once the onion is looking translucent, add in the mince and brown.

STEP TWO

Add mushrooms, spinach, tinned tomato, tomato paste and spices, and stir. Simmer on low-medium heat for 20 minutes. Season and set aside.

STEP THREE

In a pot on low-medium heat, melt butter. Once melted, add the flour and stir until smooth.

STEP FOUR

Cook gently until the mixture lightens a little, then slowly start adding the milk while continuously mixing with a whisk. It’s tempting to add it all at once, but that will give a lumpy, gross sauce.

STEP FIVE

Bring to the boil and cook for 5-7 minutes, constantly stirring. Add cubed cheese and nutmeg and stir until smooth. Season and set aside.

STEP SIX

In a large baking dish, layer as below:

  1. Pasta sheets
  2. Meat Sauce
  3. Pasta Sheets
  4. Bechamel
  5. Pasta Sheets
  6. Meat Sauce
  7. Pasta Sheets
  8. Bechamel

STEP SEVEN

Top with grated cheese and chopped fresh parsley (if desired) then bake for 1hr at 180 degrees celcius.
